About the Cocktail
Welcome spring with this bright and balanced cocktail. This version of the Snowdrop is a mix of herbal aquavit and absinthe with pineapple-infused Lillet Blanc and soft notes of peach.

Ingredients (one cocktail)
- 2 oz aquavit
- 1 oz pineapple-infused Lillet Blanc (see recipe below)
- ¼ oz peach liqueur
- Absinthe, for rinse
Directions
- Add the first three ingredients to a mixing glass and fill it three quarters with ice.
- Stir until chilled, then strain into a coupe glass rinsed or misted with absinthe.
- Garnish with an expressed orange peel.
Pineapple-infused Lillet
Fill a mason jar ¾ with fresh or frozen pineapple. Cover with Lillet Blanc, close the jar and give it a gentle shake. Let the jar sit for at least 2 hours (for frozen) or at least 24 hours (if using fresh) then strain through a fine mesh strainer. Store in the fridge for up to two weeks.
