Sage Rosé Cocktail
This cocktail is a variation of the classic French 75 that uses an herb-infused cordial in place of simple syrup. It can be adjusted to taste and style preferences by using different herbs for the cordial and the garnish.
Recipe
Sage Rosé Cocktail
- 1 oz Gin
- ¾ oz Sage Rosé Cordial (see recipe below)
- ¼ oz Lemon Juice
- 4 oz Brut Rosé
- Garnish: Fresh Sage + Edible Flower
Method
Shake in a cocktail shaker with ice for 15 seconds. Add some of the Brut Rosé to the Martini glass. Strain the shaken cocktail into the glass. Top with the remaining Brut Rosé and garnish with a fresh sage leaf and edible flower.
Sage Rosé Cordial
- 100 grams of Reduced Rosé Wine
- 100 grams of Cane Sugar
- 10-14 Fresh Sage Leaves
- 1 gram of Citric Acid Powder
First, take 200 grams of Rosé wine and reduce it over medium heat until the volume is cut by 50% to 100 grams. Remove from heat, add the fresh sage leaves, cover, and steep for 10 minutes.
Remove the sage leaves and stir in the 100 grams of sugar and 1 gram of citric acid powder. Once dissolved, place in the fridge to cool completely. Add to a clean, air-tight bottle and keep refrigerated. This will remain fresh for 6-8 weeks.
