The Gin & Sonic
This cocktail is just as refreshing as it looks. Using the “sonic” water provides a perfect balance between bitter and crisp bubbles to accent the gin. The butterfly pea imparts a powerful visual aspect for the drink. You could swap out the liqueurs with other lighter options such as: pamplemousse, bergamot or pear.
Recipe
Gin & Sonic
- 2 oz Gin infused with Butterfly Pea Flower (see recipe below, or use a gin such as Empress 1908 Indigo)
- ¼ oz Elderflower Liqueur
- 1 bar spoon of Lemon Juice
- 2½ oz Soda Water
- 2½ oz Tonic Water
Method
First, place your Butterfly Pea infused Gin in the freezer for the best cocktail. Add ice to your highball glass. Add the liqueur, and follow with the 5 oz of “Sonic” water. Now, gently float the Gin on top of the Sonic water. Next, slowly add the lemon juice. To change the cocktail's color, stir with a spoon or straw and watch it change. Garnish with a lemon wheel.
Gin infused with Butterfly Pea Flower
- 375 ml Gin of choice
- 2 tablespoons of butterfly pea flowers
Combine the two and let it infuse for one hour. Strain and keep in an airtight container.
